Ingredients for 1 serving:

  1. 40 g Oats
  2. 175 g fat-free natural yogurt
  3. 1 tsp vanilla extract
  4. Âľ tbsp granulated sweetener
  5. ½ lemon juice and zest
  6. 2 eggs you can use 1 egg if you prefer a slightly drier texture
  7. 50 g blueberries

 Direction:

  1. Reserve ÂĽ of the blueberries, then add all of the other ingredients into a bowl and stir until combined
  2. Pour into an oven-proof dish and place the remaining blueberries on top
  3. Place on a baking tray, so you don’t end up with a messy oven if it rises a bit too much, and bake at about 180°C for 35-40 minutes
