Ingredients for 1 serving:
- 40 g Oats
- 175 g fat-free natural yogurt
- 1 tsp vanilla extract
- ¾ tbsp granulated sweetener
- ½ lemon juice and zest
- 2 eggs you can use 1 egg if you prefer a slightly drier texture
- 50 g blueberries
Direction:
- Reserve ¼ of the blueberries, then add all of the other ingredients into a bowl and stir until combined
- Pour into an oven-proof dish and place the remaining blueberries on top
- Place on a baking tray, so you don’t end up with a messy oven if it rises a bit too much, and bake at about 180°C for 35-40 minutes
